Soup and Sandwich

I love making quick meals such as sandwiches and soups that doesn't require a lot of preparation. I am a busy working mom so preparing lavish meals for dinner every night for three people is exhausting.  Tomato Soup (added chopped onions and cherry tomatoes) and Tofurkey Sandwich - 2  slices of Ezekiel Bread, 4 Slices of Tofurkey, leftover cornbread stuffing, cranberry sauce, vegenaise and Arugula.

Tonight's Quick Dinner

Hubby's Dinner: Baked Chicken with a side of Quinoa and Blackeyed Peas, Steamed Green Beans and Mashed Yams sprinkled with cinnamon. The only thing I didn't make is the Baked Chicken.

My Dinner: Grilled Veggie Patty cut in Strips with Quinoa and Blackeyed Peas, Steamed Green Beans and Mashed Yams sprinkled with cinnamon. YUM!!!
